Watermelon Feta Salad or Appetizer

Farmer’s Market Demo 7/22/26

Ingredients:

  • 4 cups 1 inch chunks (cubed) seedless watermelon
  • 1-2 tablespoons fresh mint leaves, torn
  • 1/2 cup Feta, crumbled (or 1 cup 1/2 inch cubed for appetizer)
  • 1/2 cup chopped pistachios
  • 3-4 tablespoons Lemon Grass Mint White Balsamic Vinegar
  • cracked black pepper

Combine melon, mint and feta in a large bowl. Add pistachios. Drizzle with Lemon Grass Mint White Balsamic and top off with a few cracks of black pepper. Toss and Serve.

For Appetizer:
Cube Feta into 1/2 in chunks. Using only 1/2 of the watermelon, stack a watermelon cube on top of a feta cube and skew with a wood cocktail pick (4.5 inch). Make a platter of these, then drizzle the Lemon Grass Mint White Balsamic on top. Now, place a mint leaf on each one as the balsamic will help it to stick and sprinkle with chopped pistachios. Omit the pepper as the appetizer is more aesthetically pleasing without.
