Compliments of OV Harvest
Company for the weekend and it’s cold, make this soup!
Ingredients:
- 1 pound ground turkey breast
- 1 small onion, peeled and chopped
- 2 carrots, peeled and chopped
- 2 small green peppers, chopped
- 2 garlic cloves, peeled, smashed & minced
- 2 tablespoons of extra virgin olive oil (single varietal medium-robust intensity or Tuscan, Oregano, Basil, etc.)
- 1 14.5 ounce can diced tomatoes
- 4 cups (32 oz) chicken stock
- 2 handfuls of fresh spinach
- 1 tablespoon Jane’s Italian Seasoning (available in store)
- Sea salt and cracked black pepper to taste
Directions:
1. In a large pot over medium heat, sauté the ground turkey in 1 tablespoon of EVOO or flavored olive oil, then add in onion, carrots, green pepper plus a little more EVOO (1/2-1 tablespoon) to sauté until tender. Now add garlic for a minute of sautéing as you do not want it to burn. Season with a little sea salt and cracked pepper.
2. Add tomatoes, stock, and italian seasoning. Simmer, uncovered, about 15 minutes. Add spinach and simmer another 5 minutes. Serve with Rosemary crackers or crusty bread & enjoy!
