The Perfect Mixed Green Salad with a Simple Vinaigrette


Serves 4-6

2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
kosher or sea salt and cracked black pepper
6 cups of mixed greens – trimmed, washed and dried

Green suggestions:
romaine – green or red oak leaf lettuce
watercress – stemmed & small leaves left whole
baby spinach – stemmed & small leaves left whole

Add Ins:
1/2 small apple, sliced or 1/2 cup fresh fruit
2 ounces of cheese like feta, goat or blue
2 ounces of almonds or walnuts
1/4 cup diced cucumber
1/4 cup fresh herbs (like basil, mint, chives)


In a large bowl, slowly whisk the olive oil into the vinegar to create an emulsion. Season to taste with salt and pepper. Add lettuce and gently toss to coat. Add in any other items and toss again. Serve immediately.
