Romaine Salad with Pears & Pomegranate Arils
Vinaigrette
1/4 cup (4 Tbsp) OV Harvest Chocolate Balsamic Vinegar
2 Tbsp OV Harvest UP Extra Virgin Olive Oil – mild intensity or substitute Walnut Oil for a nutty taste
sea salt
Salad
1 head of Romaine – chopped
1/3 cup pomegranate Arils/Seeds
1 large red D’Anjou Pear – cored and chopped
2-3 scallions, thinly sliced
Gorgonzola crumbles or goat cheese on top (approx 3 oz)
Make the vinaigrette
In a small bowl, whisk (slow drizzle) the oil into the balsamic until well emulsified. Season with salt
Now the Salad
In a large bowl, toss the romaine, pear, pomegranate arils and scallions with half of the vinaigrette and season with salt. Top with cheese. Serve the remaining vinaigrette on the side.
