Pork Tenderloin with Sautéed Apples

Ingredients

3/8 teaspoon salt
1/4 teaspoon ground coriander
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pound pork tenderloin, trimmed and cut crosswise into 12 pieces
3 tablespoons OV Harvest butter olive oil (1Tbsp for cooking pork)
2 cups sliced and peeled apples, like Gala or another sweet variety
1/3 cup chopped shallots (or yellow onion)
1/8 teaspoon salt
1/4 cup OV Harvest red apple or cinnamon pear balsamic vinegar

Preparation

Mix first 5 ingredients and rub on pork. Heat a large cast-iron skillet over medium-high heat. Coat pan with 1 Tbsp butter olive oil. Add pork to pan; cook 3 minutes on each side or until desired degree of doneness. Remove pork from pan; keep warm.
Add butter olive oil to pan; swirl to coat. Add apple slices, shallots, and salt; sauté until apples start to brown. Add balsamic to pan, and cook for 2 minutes or until apple is crisp-tender. Serve apple mixture with the pork.
