This salad cuts through the richness associated with boards!
Serves 4-6
Salad Ingredients
1 large or 2 small heads Romaine lettuce – chopped
1/3 cup red onion- chopped
1 cup green olives -meaty ones like a Castelvetrano-whole or Gordal pitted/stuffed
2 oz Parmesan Cheese – shaved
1/4 cup white balsamic vinegar or juice of 1 medium lemon
1/4 cup Spicy Calabrian Pesto Olive Oil
sea salt and freshly ground black pepper
croutons – optional
Directions:
In a large bowl, slowly whisk the olive oil into the vinegar to create an emulsion. Season to taste with salt and pepper. Add lettuce and gently toss to coat, then add in remaining items and toss well. Serve immediately.
