Meats:  

You will need 2 ounces per person if served as an appetizer, otherwise make it 4-5 ounces if it is to stand alone as the main event for food.

Smoked Ham or Prosciutto – sliced thin
Sopressata  
Sausage – warm & cut bite size
Hard/Dried Salami – sliced the thickness of a quarter, on the diagonal

Cheese: 3 is a good number; mild to bold in flavor.  Serve room temperature

Brie
Goat Cheese
Hard Cheese – Parmigiano-Reggiano or a well aged cheddar & broken into bite sized chunks

Condiments:

Olives
Artichokes
Roasted Red Peppers
Mustard
Fig Jam
Nuts – roasted
Honey – to drizzle over cheeses like Brie or Percorino Romano
Extra Virgin Olive Oil – to drizzle or drip

Bread/Crackers:

Baguette – crusty and sliced diagonally
Gluten – free Cracker like Nut Thins with Sea Salt
Breadsticks

Fruit:

Grapes – red or green
Apples – sliced
Pears – sliced
Apricots – dried

Garnish:  Thyme or Rosemary                                                                                                                                                      
Serve with a fresh salad with lemon olive oil and white balsamic or pinot noir vinegar and a cold bottle of something delicious!  Drink options:  choose a crisp, dry white wine, medium-bodied red wine, Lambrusco, beers such as IPA, and/or sparkling water with a slice of lemon or lime.  For nonalcoholic option that is different, Oolong Tea or Lemonade with less sugar.
