It is Spring time. What are you going to eat that is good for you? Here are some suggestions:
- Beets – full of cancer-fighting antioxidants and potassium plus high in folate and iron. Beet fiber can improve bowel function and cholesterol. Try our beet hummus or roasted beets with mint.
- Asparagus – Vitamin K (strong bones); Vitamin A (eyes, heart, lungs, kidneys and other organs); thiamin (brain and liver). Add Asparagus to your salads or roast with a drizzle of lemon olive oil to bring out its flavor. - Berries – Vitamin C, fiber and phytonutrients. Low in calories, berries offer you a good source of phenolic antioxidants just like fresh olive oil. Phenols help with inflammation and protect the heart against disease. Try our Strawberry & Kale Salad.
- Arugula – Loaded with Calcium, Vitamins A, C & K, plus a good dose of iron. Add it to your mix salad greens and serve with our Citrus Vinaigrette.
Feed your brain…It is suggested that if you consume two or more servings a day of vegetables you will slow your cognitive decline. A rainbow of brightly colored produce is a good start. Dress you greens in olive oil which has monounsaturated “good” fats. Then, serve up some omega-3s by eating non-fried cold water wild caught fish like salmon, trout or haddock.
Remember, any foods that are good for heart health equals brain health!
